Services for Frederick Herman Eilenberger, Jr., 78, of Palestine, will be at 10 a.m. Thursday at Athens City Cemetery with the Rev. David Pittenger officiating. Burial will be under the direction of Herrington Land of Memory Funeral Home. Mr. Eilenberger died Monday at Methodist Hospital in Lubbock after a brief illness.
He was born in Palestine on June 22, 1913, to Frederick Herman and Anna Dorthea Jorgeson Eilenberger. He was a lifetime resident of Palestine and was a member of the First Presbyterian Church. During World War II, he serviced in the Army Air Corps.
He was a graduate of the University of Texas in business administration. He was one of the co-owners of American Home Bakery and helped his wife in a catering business. The family owned and operated the bakery until it was sold in 1979. It operates today under the name of Eilenberger’s Bakery.
Mr. Eilenberger was preceded in death by his wife, Claire, in March.
He is survived by his son, F.H. “Fritz” Eilenberger III of Palestine; daughter, Elise Eilenberger Smith of Lubbock; brother, John Frederick Eilenberger of Palestine; sisters, Emily Lockey of Tyler, Edith Imhoss of Houston and Elizabeth Sanders of Longview; and two grandchildren.
